LES CARDONS A LA LYONNAISE

LES CARDONS A LA LYONNAISE
Effeuiller et effiler les côtes, puis les citronner à l'aide d'un demi-citron.
Couper chaque tige en tronçons d'environ 4 cm, lees faire cuire jusqu'à ce qui'ils soient tendres, à feu doux dans de l'eau salée, puis les égoutter.
Faire fondre 80 g de beurre dans une casserole, ajouter autant de farine, arroser l'ensemble dÄun bouillon de volaille mélangé à de la crème fraîche et à un jaune d'œuf.
Disposer les cardons dans un plat à gratin, les recouvrir de la sauce, de rondelles de moelle, éentuellement d'un peu d'emmental râpé, puis enfourner environ 12 minutes.

LES CUISSES DE GRENOUILLES
Prévoir une douzaine de cuisses par personne. Couper les pattes de chacune puis laisser mariner les cuisses dans du vin blanc salé et poivré, pendant une demi-heure.
Bien les égoutter, faire roussir du beurre dans une poêle et en recouvrir le fond avec les cuisses sans qu'elles ne se chevauchent pour les faire légèrement blondir (recommencer l'opération avec les cuisses restntes si nécessaire).
Terminer la cuisson en plaçant l'ensemble de nouveau dans la poêle, assaisonner, ajouter un hachis d'ail et de persil, éventuellement quelques gouttes de jus de citron.
Bien mélanger délicatement puis paisser mijoter environ 12 minutes. Servir très chaud.

LA CERVELLE DE CANUT
Salade de fromage blanc consommée par les canuts (anciens tisseurs de soie lyonnais) lors des mâchons quotidiens (petits repas du matin).

Ajouter à 1 kg de fromage blanc égoutté, 1 échalote, du persil, de la ciboulette, du cerfeuil et une gousse d'ail, le tout haché menu.
Préparer une sauce composée d'huile d'olive, de quelques gouttes de vinaigre et de vin blanc.
Bien mélanger l'ensemble, assaisonner et placer au réfrigérateur. A servir frais en entrée.

LE TABLIER DE SAPEUR
Dans le gras double, prendre une tranche épaisse dans le "bonnet". La placer dans un plat à gratin sur un lit d'oignons émincés, saler, poivrer, et recouvrir de vin blanc.
Mettre au four à 200° et cuire à l'étouffée pendant 45 minutes.
Sortir du four et laisser refroidir.

SAUCE: Poêler dans du beurre un bouquet de champignons et quelques morilles. Saler, poivrer, flamber au cognac. Ajouter un léger fond de veau, de la crème fraîche, et laisser réduire pour que le tout devienne onctueux.

Réchauffer le tablier avec une petite couche de vin blanc, au four, sans couvrir.
Verser la sauce sur le tablier, et servir très chaud.
